Wood-fired bread oven for commercial scale production. 6′ wide by 10′ deep hearth. separate firing door at back. full width bread loading opening. medium mass to suit baker’s needs– 6″ in the vault, 7″ in the hearth, 4.5″ in the walls. super insulated 8-12″+ with foil between layers of ceramic blanket and outer layer of rockwool. the insulated core will be surrounded by concrete block enclosure by client’s masons.
